Cranberry Orange Bread

This is a favorite breakfast bread of mine. Tangy cranberries mixed with delightful orange citrus is a wonderful way to greet the morning. I made this bread for the first time when it was my turn to make treats for the staff meeting. It got rave reviews, even from the head of the company! Hope you enjoy it!

2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1 1/2 cups fresh cranberries
1/2 cup chopped pecans
1/4 cup margarine, softened
1 cup white sugar
1 egg
3/4 cup orange juice

 

In a medium bowl, mix together the flour, baking powder, baking soda and salt. Add in the orange zest, cranberries and pecans. In a large bowl, mix the margarine, sugar and egg. Add in the orange juice. Add the flour mixture and mix just until moistened. Pour into a 9 x 5-inch greased and floured loaf pan. Bake in a 350 degree oven for 1 hour or until it tests done. Take out of the oven and let it sit for 10 minutes. Turn onto a wire rack and let it cool.
