Chocolate Almond Bars

In one of my first jobs out in the "real world" after graduating from college, I baked these bars for a holiday party. I remember being terrified, scared that no one would like them. Scared that they would taste awful. It was the first time I baked for people other than friends and family. It was like going on my first job interview, painful and awkward. Hey, not all baking stories are happy stories! They turned out okay, not one of my greatest baking masterpieces but not one of the horrible baking disasters either. The recipe itself is quite good. I made it again when I wasn't quite so terrified of the outcome and they turned out quite tasty.                     

1 1/2 cups flour      

2/3 cup sugar

3/4 cup butter

1 1/2 cups semisweet chocolate chips

1 can (14 ounces) sweetened condensed milk                                    

1 egg

2 cups almonds, toasted and chopped

1/2 teaspoon almond extract

1 teaspoon shortening

 

Preheat oven to 350 degrees. Mix together flour and sugar; cut in butter until mixture is crumbly. Press into a 9 x 13 baking pan. Bake in preheated oven for 20 minutes; until lightly browned. In a medium saucepan, melt chocolate chips with the sweetened condensed milk. Remove from heat when chocolate is completely melted. Allow mixture to cool slightly before beating in egg. Add in almond extract and chopped almonds. Put into the prepared crust. Bake for 25 minutes; until bars are set. Allow to cool. Melt shortening and ½ cup chocolate chips. Drizzle this mixture over the bars. Put bars into the refrigerator to chill for 10 minutes and then cut.
